Margarita Pie Recipe
Ingredients
| 8 ounces pretzels, salted or unsalted | ||
| Sugar | 1/2 Cup (16 tbs) (Crust:) | |
| Butter | 9 Ounce, melted (Crust:) | |
| Lime juice | 3/4 Cup (16 tbs) (Filling:) | |
| 1/2 tablespoon plain gelatin | ||
| Eggs | 4 , separated (Filling:) | |
| Sugar | 1 1/4 Cup (16 tbs) (Filling:) | |
| Lime rind | 1 Tablespoon, grated (Filling:) | |
| Tequila | 1/2 Cup (16 tbs) (Filling:) | |
| 1/4 cup orange-flavored liqueur | ||
Directions
GETTING READY
1)To prepare crust, grease a 10 inch springfoam pan.
2)Mix together crushed pretzels, sugar and butter.
3)Layer pan bottom with this mixture and press tightly.
4)Place in refrigerator.
MAKING
5)To prepare filling, soften gelatin by sprinkling lime juice over it.
6)Beat eggs in a water bath. Add in sugar (only half) and rind. Beat well.
7)Dissolve softened gelatin over boiling water bath with egg mixture. Stir continously.
8)Trasnfer to a bowl that is chilled.
9)Mix in tequila, liquer and refrigerate to make it cold.
10)Beat together egg whites and sugar to form peaks.
11)Fold in egg yolk mixture into egg white mixture gradually and combine very well.
12)Place bowl over ice and stir frequently until mixture is set.
13)Swirl the mixture onto a chilled crust.
14)Refrigerate for another 2 hours.

15)Serve chilled.
