Marchand De Vins Sauce Recipe
Ingredients
| Butter | 30 Milliliter | |
| Ham | 125 Milliliter, diced | |
| Mushrooms | 125 Milliliter, diced | |
| Green onions | 125 Milliliter | |
| 375 ml Demi-Glace | ||
| Sherry | 125 Milliliter | |
| Heavy cream | 60 Milliliter | |
Directions
In a sauce pan melt the butter, saute the ham, mushrooms and green onions.
Add the demi-glace and sherry.
Reduce heat and simmer to half of the sauce's volume.
Add cream and simmer for 2 minutes longer if using.
Add the demi-glace and sherry.
