 Butter30 Milliliter
 Ham125 Milliliter, diced
 Mushrooms125 Milliliter, diced
 Green onions125 Milliliter
 375 ml Demi-Glace
 Sherry125 Milliliter
 Heavy cream60 Milliliter

Directions

In a sauce pan melt the butter, saute the ham, mushrooms and green onions.
Add the demi-glace and sherry.
Reduce heat and simmer to half of the sauce's volume.
Add cream and simmer for 2 minutes longer if using.
