Ingredients

 
1 1/4 cups sugar
 
3/4 cup butter or margarine, softened
 
1/2 cup milk
 
1 teaspoon finely shredded lemon peel
 
1 tablespoon lemon juice
 
2 1/4 cups sifted cake flour
 
1 teaspoon baking powder
 
1 1/4 teaspoons salt
 
3 eggs
 
2 tablespoons boiling water
 
1 tablespoon sugar
 
1 1-ounce square unsweetened chocolate, melted and cooled

Directions

Gradually beat 1 1/4 cups sugar into the butter or margarine; cream till light and fluffy, 8 to 10 minutes at medium speed of electric mixer.
Beat in milk, lemon peel, and lemon juice.
Sift together flour, baking powder, and salt.
Add to creamed mixture; mix on low speed till smooth, about 2 minutes.
Add eggs, one at a time, beating 1 minute after each.
Beat 1 minute more, scraping sides of bowl frequently.
Combine boiling water, 1 tablespoon sugar, and melted chocolate; stir into half of the batter.
Into a greased 9x5x3-inch loaf pan alternate spoonfuls of light and dark batters.
With narrow spatula gently stir through batter to marble.
Bake at 300° about 1 hour and 20 minutes.
Cool 10 minutes in pan; remove from pan.
Cool thoroughly.
Sift powdered sugar atop, if desired.
