Maraschino Cherry Cake Recipe

Ingredients
Sift together:
2 3/4 cup sifted flour
1 tsp. salt
1 3/4 C sugar
4 tsp. baking powder (double-acting)
Directions
Cream 2/3 cup shortening.
Then add 1/3 cup cherry juice and 2/3 cup milk.
Add all of this to flour mixture.
Add 16 maraschino cherries cut in eighths.
Beat vigorously with spoon or electric hand mixer for 2 minutes.
Scrape sides and bottom of bowl constantly.
Add 3/4 cup unbeaten egg whites continue beating 2 more minutes again scraping bowl.
Fold in 1/2 cup finely chopped nuts (optional).
Pour batter into prepared pans.
Bake 30-35 minutes at 350°.
Use cherry juice for icing.
Very pretty and festive looking.
