Mixed Pepper Maque Choux Recipe
The maque choux is a stewed corn preparation prepared with fresh corn and vegetables like pepper, onions and tomatoes. Seasoned with salt and red and balck peppers, the maque choux is can be served as a side in a meal and is quite flavorful.
Ingredients
| Ears of corn | 8 Medium | |
| Onion | 1 Medium, chopped | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| Butter/Margarine | 2 Tablespoon | |
| 1 medium tomato, cut up | ||
| Salt | 1/4 Teaspoon | |
| Ground red pepper | 1/4 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
Directions
Remove corn from cob, cutting two thirds of the way to the cob.
Then, scrape the cob with the dull edge of a knife.
You should have about 4 cups corn mixture.
Set aside.
In a 3 quart saucepan over medium heat cook onion and green pepper in butter or margarine about 5 minutes or till vegetables are tender.
Stir in corn, tomato, salt, red pepper, and black pepper.
Reduce heat to low.
Cover and cook about 20 minutes or till corn is tender.
Season to taste with salt.
