Directions

MAKING
1.In a saucepan, boil maple sugar and water to the soft-ball stage (238° F.) to make a maple syrup out of it
2.Remove from the fire and cool while the egg-whites are beaten stiff
3.Then pour the syrup in a thin stream, over the stiff whites, beating the mixture until it is thick enough to spread.
4.A rough surface may be obtained by spreading the top of the cake with the back of a spoon before the frosting is set.
