Maple Glazed Carrots Recipe

Ingredients
6 to 8 medium-sized carrots
1/2 cup (125 mL) fresh orange juice
Grated rind of 1 orange
3 tbsp (50 mL) maple syrup
A pinch of mace or nutmeg
3 tbsp (50 mL) butter
Directions
Peel the carrots.
Cut into sticks.
Pour the orange juice into a 4-cup (1 L) microwave-safe dish.
Heat 1 minute at HIGH.
Add the carrots and the orange rind, stir to coat the carrots with the orange juice.
Cover and microwave 8 to 9 minutes at HIGH.
Stir again.
Add the remaining ingredients.
Microwave, uncovered, for 3 minutes at HIGH, stirring after the first 2 minutes.
Check doneness, as some carrots may be glazed and soft after 2 minutes.
Helpful hint: To heat liquid honey, corn syrup or maple syrup, remove metal cap from the container, then microwave, uncovered, 30 to 45 seconds at HIGH for a 13-ounce bottle or until bubbles appear.
If the container isn't microwave-safe, pour the honey or syrup into a glass container before heating.
