Maple Walnut Pudding Cake Recipe
Ingredients
1/2 cup milk
2 egg yolks
3/4 cup maple syrup
1/4 teaspoon maple extract (vanilla extract may be substituted)
1 cup minus
2 tablespoons whole wheat flour
2 teaspoons baking powder
3 tablespoons butter, melted and cooled
1 cup finely chopped walnuts
1 2/3 cups hot water
Directions
Preheat oven to 350°F.
Butter a 2-quart casserole.
Blend together all ingredients except walnuts and hot water.
If you wish, you can use a food processor to do this, adding the ingredients in the order given.
Pour mixture into prepared casserole, sprinkle walnuts on top, and pour hot water over all.
Bake for 35 minutes, or until a cake tester or food pick inserted in the center of the upper portion, the cake part of the pudding, comes out clean.
