Maple Mousse Recipe

Ingredients
1/2 cup pure maple syrup
2 eggs, separated
1 cup heavy cream
Pinch of salt
Directions
Heat maple syrup over a low heat until beads appear around the edge of the syrup.
Separate eggs and place yolks in the top of a double boiler.
Beat yolks vigorously, then add the heated syrup, a little at a time, beating hard all the while.
Place over simmering water and cook, beating constantly with a rotary or electric beater, until the mixture will coat a wooden spoon, about 8 to 10 minutes.
Cool completely.
While maple combination cools, beat egg whites, with a pinch of salt added, until they stand in peaks.
Beat heavy cream until stiff.
Combine maple mixture, egg whites, and cream, folding gently until well blended.
Pour into an ice cube tray and freeze about 1 1/2 hours or until firm but not solid.
