Maple-Coffee Cake Recipe

Ingredients
| Canola oil | 90 Milliliter (6 Tablespoon) | |
| Maple granules | 120 Milliliter (1/2 Cup) | |
| Cinnamon | 2 Teaspoon | |
| Chopped nuts | 240 Milliliter (1 Cup) | |
| Diced apples | 1⁄2 Cup (8 tbs) | |
| Flour | 1 3⁄4 Cup (28 tbs) (Vita Spelt) | |
| Oat flour | 60 Milliliter (1/4 Cup) | |
| Baking powder | 1 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Canola oil | 120 Milliliter (1/2 Cup) | |
| Maple syrup | 80 Milliliter (1/3 Cup) | |
| Vanilla | 1 Teaspoon | |
| Eggs | 3 | |
| Plain nonfat yogurt | 240 Milliliter (1 Cup) |
Directions
Preheat oven to 350°F (180°C).
Filling: Mix together filling ingredients, except apples, if using.
Batter: Sift flours, baking powder and baking soda.
Warm oil and maple syrup just until warm to touch.
Add vanilla and 1 egg at a time, mixing after each egg.
Add flour mixture and yogurt alternately to the maple syrup mixture and blend after each addition.
Spread half of mixture into a greased and lined loaf pan.
Add 1/2 of the Filling mixture.
All diced apples should be added at this time, if using.
Add remaining Batter and finally remaining Filling on top.
Bake for approximately 50-60 minutes or until done.
