Ingredients

 
1 pkg. frozen chopped spinach
 
Water
 
Cheese Sauce, see below
 
2 tablespoons vegetable oil
 
2 green onions, thinly sliced
 
2 eggs
 
1/2 lb. ricotta cheese
 
1/2 lb. small curd cottage cheese
 
1/3 cup grated Parmesan cheese
 
1/2 teaspoon salt
 
White pepper to taste
 
10 manicotti tubes, cooked or Manicotti
 
Paprika for garnish
 
Fresh mint leaves for garnish
 
Cheese Sauce:
 
1/4 cup butter
 
3 tablespoons flour
 
3 cups milk
 
1/2 teaspoon salt
 
White pepper to taste
 
1/3 cup grated Parmesan cheese

Directions

Cook spinach in water following package directions.
Drain well.
Prepare Cheese Sauce.
In a large skillet heat oil.
Saute onions until golden.
In a medium bowl, beat eggs until mixed well but not frothy.
Stir in ricotta, cottage cheese, Parmesan cheese, salt and pepper.
Add cooked spinach and sauteed onions to cheese mixture; mix well.
Stuff manicotti tubes or place about 1/4 cup filling on one side of each cooked manicotti.
Roll up like a jelly roll.
Spread 1/3 cup Cheese Sauce evenly over bottom of a shallow 13" x 9" baking dish.
Place filled manicotti seam-side down in prepared dish.
Spoon about 3 tablespoons sauce over each filled manicotti.
Place baking dish in cold oven.
Set temperature control at 350°F (175°C).
Bake 20 minutes.
Sprinkle with paprika and garnish with mint leaves.
Serve immediately.
Makes 12 manicotti.
Cheese Sauce: In 2 quart saucepan, melt butter over medium heat.
Stir in flour.
Continue stirring until bubbly.
Gradually blend in milk.
Stir constantly over medium heat until slightly thickened.
Remove from heat.
Stir in salt, pepper and cheese.
Makes about 3 cups.
