Manicotti alla Perdue Recipe
Ingredients
| 2 cups finely chopped cooked Chicken or Turkey | ||
| Ricotta cheese | 1 Can (10oz) | |
| 1 egg, slightly beaten | ||
| Frozen chopped spinach package | 1 , drained | |
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
| Ground nutmeg | 1/2 Teaspoon | |
| 3 cups marinara or spaghetti sauce, divided | ||
| Manicotti package | 1 , cooked | |
| Shredded mozzarella cheese | 3/4 Cup (16 tbs) | |
Directions
Preheat oven to 350°F. In medium bowl, combine first 6 ingredients. Into 13x9-inch baking pan, spoon a thin layer of marinara sauce. Fill manicotti shells with chicken or turkey mixture and arrange over sauce. Pour remaining sauce on top; sprinkle with mozzarella. Bake, covered, 25 to 30 minutes until hot and bubbly.
