Manicotti Recipe

Ingredients

 
8 manicotti (about 1/4 pound) macaroni
 
2 cups (1 pound) dry cottage cheese
 
1 egg, slightly beaten
 
1/3 cup grated Parmesan cheese
 
1/4 cup finely chopped parsley
 
1/2 pound ground beef
 
1/3 cup chopped onion
 
2 medium cloves garlic, minced
 
1 teaspoon basil, crushed
 
1 teaspoon oregano, crushed
 
2 cans (10 3/4 ounces each) condensed tomato soup
 
1/2 cup water
 
2 slices (3 ounces) Mozzarella cheese, cut into 8 triangles

Directions

Cook manicotti until tender; drain.
Combine cottage cheese, egg, Parmesan, and parsley; fill manicotti.
Arrange manicotti in shallow baking dish (12x8x2 inches).
In saucepan, brown meat and cook onion, garlic, basil, and oregano until onion is tender.
Stir in soup and water.
Pour over manicotti.
Bake at 350° F. for 35 minutes.
Top with Mozzarella.
Bake until cheese melts.
