Manhattan Clam Chowder Recipe
Ingredients
| Salt pork | 1/8 Pound, diced | |
| Green pepper | 1 To taste, minced | |
| Garlic | 1 Clove (5gm), minced | |
| Celery | 1/2 Cup (16 tbs), chopped | |
| Onions | 1/3 Cup (16 tbs), minced | |
| 1 qt. clams in liquor | ||
| Potatoes | 3 Large, diced | |
| Boiling water | 3 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Stewed tomatoes | 3 Cup (16 tbs) | |
| Thyme | 1/3 Teaspoon | |
| Cayenne | 1/8 Teaspoon | |
| Chowder crackers | ||
Directions
Fry pork in skillet until crisp, remove.pork, and saute pepper, garlic, celery,and onions in remaining fat for 3-4 minutes.
Add clams, potatoes, boiling water, salt and cover tightly and simmer 1/2 hour.
Add tomatoes, thyme, and cayenne and simmer 1/2 hour longer.
Serve over split chowder crackers in hot deep bowl.
