| 4 Ripe Mangoes, Peeled, Pitted And Diced | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| Cilantro | 1/4 Cup (16 tbs), chopped | |
| 2 Jalapeno Peppers, Seeded And Chopped | ||
| Garlic | 1 Clove (5gm), minced | |
| Lime juice | 2 Tablespoon | |
| Red bell pepper | 1/2 Small, diced | |
| Ground black pepper | 1 To taste | |
| 1 Shallot, Finely Diced | ||
| Salt | To Taste | |
Directions
In a medium mixing bowl, combine mangoes, jalapenos, bell pepper, shallot, olive oil, cilantro, garlic, lime juice, salt and pepper; gently mix.
Refrigerate, covered, overnight to let flavors blend.
