Mango Delight Dessert Recipe

Ingredients
3 mangoes
3 egg yolks
75 gm ground sugar
juice of 1/2 a lime rind of 1 lime
1/2 cup cream or top of the milk
whipped grated chocolate or crystallised ginger (opt.)
Directions
Put a few cups of water in the saucepan and bring it to simmering point.
Whisk the egg yolks and sugar in another bowl and keeping it over the simmering water, keep stirring till slightly warmed.
Remove from the fire.
Keep whisking till cooled.
Peel, deseed and pulp the mangoes.
Add the pulp to the egg-sugar mixture.
Add the lime juice and rind and check for sweetness; add a little more sugar or lime juice, as required.
Fold in the whipped cream and immediately turn into the bowl or glasses and freeze.
If you are not quick enough at this stage, the mixture might separate.
Just before serving, take out of the freezer compartment and put it in the fridge for about 15-20 minutes.
Decorate with the chocolate or ginger, cut into very fine pieces.
