2 pounds brown sugar
 
1 1/2 cups raisins
 
1 1/2 cups vinegar
 
1/2 teaspoon salt
 
1/4 teaspoon garlic powder
 
4 teaspoons ginger
 
1 hot red pepper, crumbled
 
8 cups cubed mangoes
 
1 cup chopped green pepper
 
2 tomatoes, chopped
 
1/2 cup chopped onion

Directions

Combine sugar, raisins, vinegar, seasonings, and hot red pepper in deep kettle.
Heat, stirring, until sugar is dissolved; add remaining ingredients.
Simmer, stirring occasionally, for 2 hours, or until thickened; pour into hot sterilized jars.
Seal; serve with curried dishes
