Directions

Slice mangoes finely and boil with sufficient vinegar to reach their level.
When mixture is smooth, leave a moment and then bring to the boil 1 pint vinegar, together with the sugar and salt; then add the other mango mixture.
Crush the mustard seeds with the chopped garlic, ginger, chillies (not their seeds, if you don't want it too hot), raisins and turmeric.
