Instant Amrakhand (Mango Shrikhand) Recipe Video
|Ripe mangoes||2 Medium, peeled, cut into small cubes (Alphonso Mangoes used)|
|Cream cheese||8 Ounce, cut into cubes (One 8 oz pack at room temperature used)|
|Sugar||1⁄3 Cup (5.33 tbs) (Adjust as per your taste)|
|Saffron||1 Pinch (A couple of strands)|
|Milk||1 Tablespoon (To dissolve the saffron strands)|
|For the seasoning|
|Cardamom powder||To Taste|
|Nutmeg powder||1 Dash (Optional)|
|For the garnishing|
|Slivered almonds||2 Tablespoon (As needed)|

1. In a small microwave safe bowl, take a little milk with a few saffron strands in it. Place in the microwave for about 30 seconds. Set this aside.
2. In a blender, add the ripe mango pieces, cream cheese, sugar and the saffron dissolved milk. Blend to make a smooth puree.
3. Season with cardamom powder and nutmeg powder (if using).
4. Garnish with slivered almonds, if desired.
5. Serve with hot puris.
