Mango Nut Bread Recipe
Ingredients
| 1/2 cup butter or solid shortening | ||
| Granulated Sugar | 3/4 Cup (16 tbs) | |
| Eggs | 2 | |
| All purpose flour | 2 Cup (16 tbs), sifted | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Raw mango | 2/3 Cup (16 tbs), finely chopped | |
| Lime juice | 1 Tablespoon | |
| Nuts | 1/2 Cup (16 tbs), chopped | |
Directions
Cream butter and sugar in a mixing bowl.
Add eggs.
Stir in flour, baking soda and salt.
Add mango and lime juice.
Mix well.
Stir in nuts.
Turn into a greased 9x5x3 inch loaf pan.
Bake in a 375°F oven 1 hour, or until done.
Do not cut bread until the next day.
