Directions
Spoon pulp into processor or blender, scraping as much pulp away from seed as possible.
Puree until smooth (about 3 cups puree).
Set aside.
Combine water and honey in small saucepan and bring to boil over medium heat, stirring occasionally to dissolve honey.
Reduce heat and simmer 5 minutes.
Remove from heat and let cool.
Blend lemon juice and honey mixture into mango puree.
Pour into shallow baking dish or ice cube tray and freeze until firm, about 3 hours.
Let stand at room temperature 5 to 10 minutes to soften slightly.
