Directions

GETTING READY
1. Using a zester, take the zest off a lemon and orange.
2. Cut the dried candied mango into thin strips, dice to small bits and add to a saucepan.

MAKING
3. To the saucepan add the zests, grate fresh ginger, cinnamon stick and one whole star anise and toss together.
4. Add 1 cup of lemon and orange juice, a teaspoon of garam masala, a dash of hot sauce, a pinch of salt, water and sugar.
5. Mix with a little wooden spoon.
6. Raise heat to medium heat and bring it to simmer for about 15 minutes.
7. Add the cranberries and cook them until done on simmer.
8. To check for doneness mash a little cranberries with the wooden spoon and see if it yields.

SERVING
9. Transfer to a serving dish and serve.
