Mango Chutney Recipe Video

This past summer my husband's Uncle , Hasan , visited with us. He is a fun person to be around and is young at heart which makes the time we spend together a fun time. Uncle Hasan and I share the love of cooking, so I got a chance to get one of his recipes that he prepared in my kitchen. The recipe is Mango Chutney.Thanks Uncle Hasan for sharing your recipe and cooking knowledge with me and my readers on Mimi Cooks. I have no doubt that it is a great addition and it will enrich my blog. Your experience is always appreciated.

2 Mangos, peeled and diced
 
½ a cup Apple Cider Vinegar
 
2-3 Table Spoons Fresh Ginger- You may use dry ginger too
 
¼ cup Cashew nuts
 
¼ cup Raisins
 
Cayenne Peppers-Optional and to taste
 
You need a non reactive pot to cook this recipe due to the use of vinegar.

Directions

Directions:
Peel the mangos and dice into small pieces. Add the raisins. Add the peeled and diced ginger. Add the vinegar.
In a sauce pan, cook the ingredients until the mangos cook to a soft texture for about 10-12 minutes. Add the cashews and Leave on low heat for few more minutes. Towards the end of the cooking time, add Cayyene pepper if you like.
Serve the Mango Chutney with grilled chicken, meat or fish - The chutney adds a distinctive delicious taste any meat it is served with.

The Mango Chutney looks really irresistible ! Though the typical Indian Mango chutney is different from this, I did try out this combination with raisins and vinegar and it did taste terrific. I serve it as a condiment with roti.
