Ingredients

 Mange-tout2 Pound
 Carrots2 Ounce
 Celery2 Ounce
 Fennel2 Ounce
 Butter2 Ounce
 Onion-2 oz (50 g)-sliced
 Fresh ginger-1 oz (25 g)-peeled and chopped
 Sea salt1 To taste
  black pepper1
 Raw cane sugar-1 teaspoon
 Soya sauce-1 tablespoon
 Wine vinegar1 Teaspoon
 Sesame seeds-2 teaspoons- lightly toasted

Directions

GETTING READY
1. Remove the head and tail of the peas
2. In a large pan of salted boiling water, plunge the peas and boil for five minutes
3. Drain and set aside

MAKING
4. Prepare the carrots, celery and fennel by cutting the vegetables into julienne strips
5. In the same pan of salted water, blanch the vegetables for 3 minutes
6. Drain well
7. In a large sauté pan, heat the butter
8. Add the onion, ginger and the julienne vegetables and stir-fry for 4 minutes
9. Add the pea pods and reheat gently
10. When all the vegetables are heated through, season to taste
11. Add in the sugar, soy sauce and vinegar.
12. Cook for 2 minutes while stirring all the time.

SERVING
13. Sprinkle with sesame seeds and then serve immediately on warm plate
