1 tablespoon minced onion
 
2 tablespoons butter
 
2 tablespoons unbleached flour
 
2 cups chicken stock
 
1 cup evaporated milk
 
3/4 cup blanched whole almonds, ground
 
1/2 teaspoon salt
 
1/8 teaspoon white pepper
 
Almond extract or rose water

Directions

Saute onion in butter until slightly softened.
Sprinkle with flour, cook, stirring, 3 minutes and gradually add stock.
Cook and stir until smooth and slightly thickened.
Add milk and almonds; cover and simmer 30 minutes.
Adjust seasonings to taste with salt, pepper and almond extract
