Mandarin Lemon Chicken Recipe

Ingredients
1 1/2 kg. chicken
3 tbsps. soya sauce
2 tsps. ginger, grated
1 lemon
1 1/2 cups water
2 tsps. salt
1 tbsp. sugar
1 tbsp. sesame oil
1 tbsp. cornflour mixed with 4 tbsps. cold water
Oil for frying
Spring onions and lemon slices for garnishing
Directions
Clean, cut the chicken into quarter with skin, wash and dry well.
Rub half the soya sauce over the chicken pieces and keep aside.
Peel the lemon thinly, removing only the yellow portion of the rind and not the white pith.
Chop the rind finely.
Squeeze the lemon and measure the juice which should be one-third cup.
Mix together in a bowl lemon juice, ginger, remaining soya sauce, salt, water, sugar, sesame oil and lemon rind.
Stir until the sugar dissolves.
This is the sauce mixture.
Heat oil in a pan and fry the chicken pieces, skin side down.
Brown both the sides.
Remove from heat, keep aside.
Add spring onions to the remaining oil, saute for 3 minutes.
Add fried chicken pieces.
Mix well.
Pour in sauce mixture, stir well and simmer for 10 minutes.
Add cornflour mixture, simmer until thickened, remove and serve hot with rice.
VEGETARIAN VERSION: Use vegetarian chicken instead of chicken and follow the recipe as directed above.
