Mandarin Chicken Fried In Paper Recipe

Ingredients
1/2 kg. chicken breast, remove skin and bones
1 tbsp. soya sauce
2 tbsps. dry sherry (optional)
1 tbsp. fresh ginger, finely grated
2 tsps. sesame oil
2 tsps. salt
1 tsp. sugar
20 snow peas (gavar fali)
5 spring onions, sliced thinly
1 tbsp. cornflour mixed with 2 tbsps. water
1 pkt. rice paper or butter paper
I cup peanut oil for frying
1 cup chilli-garlic sauce
Directions
Slice chicken breast thinly and then cut them into bite size pieces.
Mix together in a bowl soya sauce, sherry, ginger, sesame oil, salt, sugar.
Add the chicken pieces and mix well.
Let it marinate for 1 hour.
Divide the rice paper or butter paper into 5" squares, and place on each a snow pea, a few slices of spring onion and 2 pieces of chicken.
Fold up like an envelope, or twist both the ends and secure each piece of chicken.
Mix the cornflour and water to make a paste.
Seal the upper fold of each envelope with this paste.
Heat oil in a heavy bottomed pan and fry 7 to 8 envelopes at a time over high heat for 1 1/2 minute.
Drain on absorbent paper and serve hot with paper on.
Can also be served as a snack with sauce.
VEGETARIAN VERSION:
Use cooked and seasoned soya nuggets or slice of cottage cheese with snow peas instead of chicken and follow the recipe as above.
