Mandarin Vegetables Recipe

Ingredients
625ml Chicken Stock
250g mange tout
125g carrot, sliced
250g fresh lotus root, sliced
4 sticks celery, sliced
90ml peanut oil
125g dried cloud ear mushrooms, soaked in hot water for 25 minutes, drained
125g dried black winter mushrooms, soaked in hot water for 25 minutes, drained
500g Chinese leaves, sliced
2 teaspoons cornflour
1/4 teaspoon brown sugar
1/2 teaspoon salt
4 Potato Nests to serve
Directions
In a large saucepan, heat stock and bring to the boil, add mange tout, carrot, lotus root and celery and boil for 3 minutes.
Drain; reserve 125 ml (1/2 cup) stock.
In a wok, heat oil, add mushrooms, then remaining vegetables and stir fry for 5 minutes.
In a bowl, stir reserved stock into cornflour (cornstarch) until smooth, then stir into wok with sugar and salt.
Bring to the boil, stirring, then simmer until sauce thickens.
