Mandarin Peanut Mold Recipe
Ingredients
| Mandarin orange segments - 1 11-ounce can , drained, reserve liquid | ||
| Frozen concentrated orange juice - 1 16-ounce can , thawed | ||
| Low-calorie orange-flavored gelatin - 1 3-ounce package | ||
| Ginger | 1 Tablespoon, candied | |
| Frozen nondairy whipped topping - 1 cup , thawed | ||
| Cocktail peanuts - 1/2 cup , chopped | ||
Directions
MAKING
1 In a bowl, combine reserved orange liquid and orange juice.
2 Add in water, just enough to measure 2 cups.
3 In a pan, heat 1 cup of the liquid to boiling.
4 Pour over the gelatin, stirring until dissolved.
5 Stir in the ginger.
6 Place in the refrigerator and chill until partially thickened.
7 Gradually fold in the whipped topping, oranges, and peanuts.
8 Transfer into a 5-cup ring mold.
9 Plce in the refrigerator and chill until firm.
SERVING
10 Carefully unmold on lettuce.
11 You can choose to fill the center with tuna or chicken salad.
12 Serve garnished with orange segments and peanuts.
