Mandarin Orange French Toast Recipe

Ingredients
1 can (11 ounces) Mandarin Orange Segments
1 tablespoon grated orange peel
1/2 cup orange juice
1 tablespoon brown sugar
2 teaspoons cornstarch
1 teaspoon vanilla extract
Dash ground nutmeg
2 eggs, lightly beaten
1/2 cup half-and-half
4 slices (1/2 inch thick each) stale French bread or thick-sliced white bread
2 tablespoons butter or margarine
1/4 cup Sliced Natural Almonds, toasted, optional
Directions
Drain syrup from oranges into saucepan.
Stir in orange peel and juice, brown sugar, cornstarch, vanilla and nutmeg.
Cook over low heat, stirring, until sauce thickens slightly and turns clear.
Remove from heat; add orange segments.
In pie plate, combine eggs and half-and-half.
Dip bread in egg mixture, saturating both sides.
Melt butter in large skillet until hot.
Cook soaked bread in skillet until golden brown on each side.
Place 2 slices French toast on each plate; top with Mandarin orange sauce.
Sprinkle with almonds, if desired.
