Mandarin Chicken Recipe

Ingredients
2 Cups Pineapple Juice
1/2 Cup Mandarin Orange Juice
1/2 Cup Pineapple Juice, drained from pineapple
1 Tbs. Orange Marmalade
3 Tbs. Soy Sauce
1 Tsp. Ginger
2 Tbs. Lemon Juice
2 Tbs. Brown Sugar
3 Tbs. Cornstarch
1 Egg, beaten
1 Cup Flour
1 Cup Milk
1 Tbs. Wesson Oil
1 Tsp. Salt
1/4 Tsp. White Pepper
3 Double Chicken Breasts or 6 Halves, de-boned
1 Can Pineapple Chunks or Tid-Bits
1 Can Mandarin Oranges
1 Small Jar Maraschino Cherries
Directions
Mix together and boil for 2-3 minutes until thickened: pineapple juice, orange juice, soy sauce, ginger, lemon juice, sugar and cornstarch.
Set aside.
Dip deboned chicken into batter of egg, flour, milk, oil, salt and white pepper.
Drop in oil and deep fry at 360 degrees until crisp.
Drain off oil and keep warm.
Place in baking dish and put pineapple sections and orange sections over it.
Pour sauce over chicken and bake at 400 degrees for 15 minutes.
Put cherries on and bake about 5 more minutes, until bubbly.
Bell peppers and tomatoes may be used in place of cherries.
