Ingredients

 2 lbs. chuck cut for stew
 3 T. vegetable fat
 Onion1 Medium, minced
 1 leek, white part only (or chives)
 Flour1/4 Cup (16 tbs)
 Bay Leaf1
 Thyme1/4 Tablespoon
 Boiling water3 Cup (16 tbs)
 Bouillon cubes3
 Tomatoes10 Ounce, minced
 4 carrots, 1/2 inch chunks
 Red potatoes4 Medium
 White onions12 Small
 2 dashes Tabasco sauce
 Salt To Taste
 Pepper To Taste

Directions

Saute meat in fat until light brown.
Sprinkle leek (chives) and onion over meat.
Mix well, saute 5 minutes more.
Sprinkle flour over meat.
Mix well.
Add bay leaf, thyme, boiling water, bouillon cubes and tomatoes.
Stirring well.
Add 1 t.salt and 1/8 t.pepper.
Bring to a boil.
Skim.
Reduce heat and simmer slowly for 2 hours.
Add carrots, onions and potatoes.
Simmer until vegetables are done.
Skim fat.
Add Tabasco sauce and season to taste with salt and pepper.
Serves 4 hungry people.
