 Chuck2 Pound, cut for stew
 Vegetable fat3 Tablespoon
 Onion1 Medium, minced
 White of leek/Chives1
 Flour1⁄4 Cup (4 tbs)
 Bay leaf1
 Thyme1⁄4 Teaspoon
 Boiling water3 Cup (48 tbs)
 Bouillon cubes3
 Tomatoes1 Can (10 oz), minced
 Carrots4 (1/2 Inch Chunks)
 Red potatoes4 Medium (Egg Sized Chunks)
 White boiling onions12 Small
 Tabasco sauce2 Dash
 Salt To Taste
 Pepper To Taste

Directions

Saute meat in fat until light brown.
Sprinkle leek (chives) and onion over meat.
Mix well, saute 5 minutes more.
Sprinkle flour over meat.
Mix well.
Add bay leaf, thyme, boiling water, bouillon cubes and tomatoes.
Stirring well.
Add 1 t.salt and 1/8 t.pepper.
Bring to a boil.
Skim.
Reduce heat and simmer slowly for 2 hours.
Add carrots, onions and potatoes.
Simmer until vegetables are done.
Skim fat.
Add Tabasco sauce and season to taste with salt and pepper.
Serves 4 hungry people.
