Mamma Rica's Potatoes Recipe
Ingredients
| Potatoes - 3 pounds, peeled and cut into 1 to 1 1/2 inch cubes | ||
| Olive oil | 4 Tablespoon | |
| Butter | 4 Tablespoon | |
| Fennel seeds | 2 Tablespoon | |
Directions
GETTING READY
1) Preheat the oven to 250 F
MAKING
2) In a saucepan, put the potatoes and pour in cold water
3) Bring the potatoes to a boil for a minutes
4) Drain into a colander and keep aside
5) In a roasting pan, pour in the olive oil and butter and add the potatoes
6) Add in the fennel seeds and roast at 400 F
7) Shake the pan to stir the potatoes frequently
8) Remove once they are golden and crisp for about 1/2 to 1 hour
SERVING
9) Serve the potatoes with a creamy dip
