Mama'S Chicken-Noodle Soup Recipe
Ingredients
1 stewing chicken (about 5 pounds)
2 medium-size carrots pared and sliced
1 large stalk celery trimmed and chopped
1 large onion sliced
3 teaspoons salt
1/4 teaspoon pepper
10 cups water
2 cups fine noodles
Directions
Rinse inside of chicken well with cold water.
Place in a kettle; add carrots, celery, onion, salt, pepper, and the 10 cups water; heat to boiling; cover.
Simmer 2 hours, or until chicken is tender.
Remove from broth; cool until easy to handle, then take meat from bones and chill to use another day.
Let broth stand until fat rises to top, then skim off.
Reheat broth to boiling, stir in noodles.
Cook 10 minutes, or until noodles are tender.
Ladle soup into heated bowls or soup plates; sprinkle with chopped parsley.
