Directions

GETTING READY
1. Coarsely cut the pork.

MAKING
2. In a food grinder, grind the pork and the pork fat.
3. In a mixing bowl, place the ground pork, salt, pepper, mace powder and ground coriander, mix well.
4. In a skillet, heat olive oil, place 2 inch flattened chunks of the prepared mixture.

SERVING
6. Serve with fried egg and toast and coffee.

Ever tried your hands on fresh sausages? Tina has a very old grinder from her grandmother which she will be using for grinding the meat. A little involved recipe as the meat is ground but there is no end to the variety of sausages that can be made at home. Using four different seasonings, Tina came with sausages of 4 different flavors. You can even control the spiciness of your sausages which is otherwise decided by the manufacturer.
