1.In a clean bowl, whisk together butter and add caster sugar until light fluffy and pale in color.
2.Stir in the dark rum.
3.Stir in the ground almonds.
4.Mix in the cocoa powder until well combined.
5.Add the cake crumbs and mix until it forms a firm paste.
6.Take a small amount of mixture and roll between your hands to form a small ball.
7.Roll over grated chocolate to give it a good covering of chocolate.
8.Place on a plate and keep it in fridge for 30 minutes until firm.
9.Dust the truffles with icing sugar and serve.
10.Serve in your favorite treat tray and enjoy!
