Directions

GETTING READY
1. Preheat oven to 275 degrees Farenheit.
MAKING
2.Chop the dried fruits.
3.Mix the dried fruits and nuts together.
4.Pour in the brandy and the honey and mix together.Marinate the fruit and nut mixture for 24 hours.
5.Butter brown paper on both sides and line pan with it.
6.Separate eggs into yolk and whites.
7.Sift flour and add cloves, nutmeg and cinnamon into it.
8.Beat egg whites with the cream of tartar.
9.Next beat egg yolks.
10.Cream the butter with the sugar.
11.Add the honey and the vanilla extract and the lemon extract in it.
12.Next goes in the beaten egg yolks.
13.Fold in the beaten egg whites.
14.Add the sifted flour and spice mixture.
15.Mix in with the marinated fruit and nut mixture.
16.Spoon in the batter in the lined baking pan.
17.Bake 2 cakes at 275 degrees Farenheit for 2 1/2 hours.

SERVING
18.Drizzle with brandy.

TIP
Wrap in plastic and store in tins 3 weeks before Christmas and drizzle with brandy each week.
