Ingredients
| Iceberg lettuce | 4 Cup (16 tbs), shredded | |
| Spinach leaves | 3 Cup (16 tbs) | |
| Bean sprouts | 2 Cup (16 tbs) | |
| Sweet red pepper | 1/2 Cup (16 tbs), chopped | |
| 1/2 cup chopped green onions 125 mL | ||
| Celery | 1/2 Cup (16 tbs), chopped | |
| 2 cans tuna, packed in water | ||
| 2 large red apples, sliced | ||
| 2 tbsp capers, drained 25 mL | ||
| Plain yogurt | 2/3 Cup (16 tbs) (Creamy Curry Dressing:) | |
| Mayonnaise | 1/3 Cup (16 tbs) (Creamy Curry Dressing:) | |
| Granulated Sugar | 1 Tablespoon (Creamy Curry Dressing:) | |
| Cider vinegar | 1 Tablespoon (Creamy Curry Dressing:) | |
| Curry powder | 1 Teaspoon (Creamy Curry Dressing:) | |
Directions
In large glass bowl, layer 2 cups (500 mL) of the lettuce, then spinach, bean sprouts, red pepper, onions and celery; top with remaining lettuce.
Cover with double layer of wet paper towels and seal with plastic wrap.
Refrigerate until serving time or overnight.
Creamy Curry Dressing: In small bowl, combine yogurt, mayonnaise, sugar, vinegar and curry; mix well.
Cover and refrigerate until serving time or overnight.
Just before serving, pour dressing over salad.
Drain tuna and arrange on top of salad.
Garnish with apple slices and capers.
