 Iceberg lettuce4 Cup (16 tbs), shredded
 Spinach leaves3 Cup (16 tbs)
 Bean sprouts2 Cup (16 tbs)
 Sweet red pepper1/2 Cup (16 tbs), chopped
 1/2 cup chopped green onions 125 mL
 Celery1/2 Cup (16 tbs), chopped
 2 cans tuna, packed in water
 2 large red apples, sliced
 2 tbsp capers, drained 25 mL
 Plain yogurt2/3 Cup (16 tbs) (Creamy Curry Dressing:)
 Mayonnaise1/3 Cup (16 tbs) (Creamy Curry Dressing:)
 Granulated Sugar1 Tablespoon (Creamy Curry Dressing:)
 Cider vinegar1 Tablespoon (Creamy Curry Dressing:)
 Curry powder1 Teaspoon (Creamy Curry Dressing:)

Directions

In large glass bowl, layer 2 cups (500 mL) of the lettuce, then spinach, bean sprouts, red pepper, onions and celery; top with remaining lettuce.
Cover with double layer of wet paper towels and seal with plastic wrap.
Refrigerate until serving time or overnight.
Creamy Curry Dressing: In small bowl, combine yogurt, mayonnaise, sugar, vinegar and curry; mix well.
Cover and refrigerate until serving time or overnight.
Just before serving, pour dressing over salad.
Drain tuna and arrange on top of salad.
Garnish with apple slices and capers.
