Directions

In the bottom half of a medium size double boiler, bring about 1 cup water to a simmer over moderate heat about 2 minutes.
Place the chocolate in the top half of the double boiler and melt it over the gently bubbling water in the bottom half about 2 minutes.
Stir in PA cups of the milk and the sugar, cover, and heat for 3 minutes or until the milk is very hot.
In a measuring cup, blend the cornstarch with the remaining milk; stir into the hot chocolate mixture.
Cook, stirring constantly, until the mixture has thickened and is smooth about 1 minute.
Cover and cook 15 minutes longer; then mix in the vanilla extract.
Spoon the pudding into serving bowls, cover with plastic wrap, and refrigerate at least 3 hours before serving.
