Ingredients

 Spaghetti8 Ounce, broken
 Assorted vegetables4 Cup (16 tbs), chopped
 Green onions3 , chopped
 1/4 cup light peanut butter
 2 tbsp soya sauce
 Rice vinegar2 Tablespoon (Dressing)
 Toasted sesame oil1 Tablespoon (Dressing)
 Packed brown sugar2 Teaspoon (Dressing)
 1 tbsp minced ginger root
 Garlic1 Clove (5gm), minced (Dressing)
 1/2 tsp Oriental chili paste or hot pepper sauce to taste
 Coriander1/3 Cup (16 tbs), chopped (Dressing)

Directions

1. Cook pasta in a large pot of boiling salted water until tender but firm. Rinse under cold water to chill; drain well. Place in a serving bowl; add vegetables and green onions.
2. Dressing: In a bowl whisk together peanut butter, soya sauce, vinegar, sesame oil, brown sugar, ginger, garlic and chili paste. Pour over pasta mixture; toss well to coat. Sprinkle with coriander.
