Make Ahead Vegetable Noodle Salad With Spicy Peanut Dressing Recipe
Ingredients
| Spaghetti | 8 Ounce, broken | |
| Assorted vegetables | 4 Cup (16 tbs), chopped | |
| Green onions | 3 , chopped | |
| 1/4 cup light peanut butter | ||
| 2 tbsp soya sauce | ||
| Rice vinegar | 2 Tablespoon (Dressing) | |
| Toasted sesame oil | 1 Tablespoon (Dressing) | |
| Packed brown sugar | 2 Teaspoon (Dressing) | |
| 1 tbsp minced ginger root | ||
| Garlic | 1 Clove (5gm), minced (Dressing) | |
| 1/2 tsp Oriental chili paste or hot pepper sauce to taste | ||
| Coriander | 1/3 Cup (16 tbs), chopped (Dressing) | |
Directions
1. Cook pasta in a large pot of boiling salted water until tender but firm. Rinse under cold water to chill; drain well. Place in a serving bowl; add vegetables and green onions.
2. Dressing: In a bowl whisk together peanut butter, soya sauce, vinegar, sesame oil, brown sugar, ginger, garlic and chili paste. Pour over pasta mixture; toss well to coat. Sprinkle with coriander.
