Mai Tai Pie Recipe
Ingredients
| Pie crust | 9 inch | |
| 1 Cup Pineapple-Grapefruit Juice | ||
| 1 1/2 Tbs. Frozen Orange Juice Concentrate | ||
| Cornstarch | 3 Tablespoon (Filling:) | |
| Sugar | 6 Tablespoon (Filling:) | |
| Salt | 1/4 Teaspoon (Filling:) | |
| Egg yolks | 2 , beaten (Filling:) | |
| Egg whites | 2 , beaten (Filling:) | |
| Rum | 3 Tablespoon (Filling:) | |
| Heavy whipping cream | 14 Cup (16 tbs), Whipped (Filling:) | |
| 1/2 Cup Heavy Whipping Cream, whipped with 1 Tsp. Orange Juice Concentrate | ||
| 6 Cherries for Garnish | ||
Directions
1.Combine juices, cornstarch, sugar and salt in a saucepan.Cook until thickened, stirring constantly.
2.Stir a little of this hot mixture into egg yolks, then add this to remaining hot mixture, stirring constantly.Cook 4 minutes over very low heat.
3.Cool mixture; add rum; beat until smooth.
4.Fold in whipped cream.
5.Fold in egg whites.
6.Pour into pie crust.
7.Top with the additional whipped cream.
8.Garnish with cherries.
9.Refrigerate.
