Mahi Mahi with Green Beans Recipe

I first tasted Mahi at a restaurant. I loved the concept of serving fish with fresh veggies. I have used only beans in my recipe because I thought too many vegetables steal the taste of Mahi Mahi.

Recipe Story

I have also had other kind of fish with veggies but some how Mahi Mahi tastes best with vegetables. I had never had a fish preparation like this before. I hope you all will try it & send me your feed back on it.

Ingredients

 
1 med. onion, chopped (about 1/2 cup)
 
1 tbsp. butter
 
1/2 c. dry White wine
 
2 pkg. (9 oz. ea.)fresh French beans
 
1 can Creamy mushroom soup
 
1 can mushroom sliced & drained
 
1 can French fried onions
 
6 pieces of Mahi Mahi

Directions

Butter a rectangular shape baking dish,pre heat the oven at 400 degrees.In a pan,add butter & heat it for a few seconds till it melts,saute onions in butter over medium heat,make sure that the onions do not burn.Pour wine in the pan,along with it add mushroom soup,diced mushrooms & beans.Cook it well,let the flavor of mushroom soup & wine mixes well with beans & diced mushrooms.Spread this mixture over the baking tray,this will make the base for fish.Now place the fish & fried onions on top of the mixture.Bake uncovered until bubbles start to form in the wine mixture and fish is hot.
If you want,before serving you can chop some beans & sprinkle over the fish.
