Mahi Mahi Tacos With Salsa Recipe Video
Ingredients
Cedar plank - 1
Oranges - 2, juiced, separated
Lemons - 2, juiced, separated
Limes - 4, juiced, separated
Olive oil – 3/4, separated
Salt - 1 teaspoon
Pepper - 1 teaspoon
Ancho Chili Pepper - 2 teaspoon, separated
Mahi Mahi - 1 pound
Roma Tomatoes - 3, chopped
Red Onion – 1/2, chopped
Cucumber – 1/2, chopped
Corn - 1 cup
Jalapeno - 1, seeded and finely chopped
Cilantro - 2 tablespoons, chopped
Salt - 1 teaspoon
Pepper - 1 teaspoon
Dijon Mustard - 2 tablespoons
Cabbage - 2 cups, shredded
Avocado - 1
Corn Tortillas - 10
Directions
GETTING READY
1) Soak a cedar plank in water for at least 1 hour.
MAKING
1) In a shallow bowl, combine the juice of 1 orange, 1 lemon and 1 lime along with ¼ cup of olive oil, salt, pepper and ancho chili pepper. Whisk to combine and place Mahi Mahi in the marinade. Allow to marinade for 30 minutes turning the fish half way through.
2) In a large bowl, combine chopped tomatoes, red onion, cucumber, corn, jalapeno, cilantro, salt and pepper and the juice of 2 limes. Stir and set aside.
3) In a separate bowl, whisk together the juice of 1 orange, 1 lemon, 1 limes, Dijon mustard, ½ cup of olive oil, salt and pepper. Then toss the shredded cabbage with the dressing and set aside.
4) Place the cedar plank on a preheated grill for 10 minutes. Then place the marinated Mahi Mahi on the cedar plank for 15-20 minutes, or until the fish is an opaque color and cooked through.
SERVING
5) Serve with warmed corn tortillas and sliced avocado.
