Cut in shortening until mixture resembles coarse meal; do not overmix.
Beat egg with water in small bowl.
Add to flour mixture, tossing briefly with fork until just moistened.
Gently form into ball.
Generously flour work surface and rolling pin.
Pat dough into circle and roll out.
Turn dough over and flour again.
Roll into 12-inch circle.
Fold dough in half and then in half again.
Transfer to pie plate.
Unfold dough and fit into plate, trimming excess dough 1 inch beyond rim of pan.
Turn excess under to make narrow rolled rim.
Flute decoratively or press edge with fork.
