Madras Curry Recipe
Ingredients
250 gms. meat, koftas, fish, vegetable or dhal
1/2 teaspoon turmeric powder
3 bay leaves
4 tablespoons ghee
Salt
3 tomatoes, chopped
Grind to a paste
2 large onions
1/2 teaspoon cumin seeds
1 ginger
1/4 teaspoon mustard seeds
1 cinnamon
1/4 teaspoon poppy seeds
4 garlic cloves
1 green chili
4 cloves
1 red chilli
2 big cardamoms
1/4 coconut, grated
1/2 teaspoon coriander powder
Directions
Heat the ghee on a moderate fire and lightly fry the tomatoes.
Add meat, fish or dhal or vegetable. (Prawns or chicken are recommended).
Simmer on a low fire till nearly dry.
Add the paste, turmeric and bay leaves: Keep stirring till completely dry; then add one to three cups of water depending on whether meat or vegetable is being cooked.
Cover the pan and simmer till tender.
Just before serving, remove the bay leaves and sprinkle grated coconut.
