Ingredients
Basmati Rice - 3 cup
Sugar - 1 1/2 cups
Raisins - 50 gms
Almonds - 10-12 (soaked in warm water)
Cashewnuts - 10-12
Dried Coconut - 50 gms (cut into small pieces)
Small green cardamoms - 3-4
Cinnamon - 1-2 pieces
Cloves - 3
Bay Leaves - 2-3
Salt - to taste
Ghee - 2 tbsp
Saffron - 3-4 strands (soaked in 1 tbsp warm water)
Silver leaf - for decoration
Directions
GETTING READY
1 Wash the rice thoroughly.
2 In a bowl, soak rice in double the quantity of water.
3 In a separate bowl, soak raisins in warm water.
4 Peel the outer skin of the almonds and chop finely.
5 Sliver the cashew nuts.
MAKING
6 In a deep pan, heat the ghee.
7 Add in the cinnamon, cardamoms, cloves, dried fruits, bay leaf, dried coconut, sugar and salt; stir.
8 Gradually add in the soaked rice and mix well.
9 Pour in enough water and simmer, covered for about 20 minutes, until the water is absorbed and the rice is cooked.
10 Uncover, and pour in the dissolved saffron.
11 Gently stir to mix.
SERVING
12 Decorate with silver leaf and serve hot.
