Ingredients
Eggs - 2
Granulated sugar - 1 cup
All-purpose flour - 1 cup, sifted
Butter - 3/4 cup, melted and cooled
Lemon peel - 1 teaspoon grated
Confectioners' sugar
Directions
GETTING READY
1. Preheat oven to 350F.
2. Grease and lightly flour madeleine pans.
MAKING
3. In top of double boiler, over hot, not boiling, water (water in bottom of double boiler should not touch base of pan above), with electric mixer at medium speed, beat eggs and granulated sugar while mixture heats to lukewarm—takes about 2 minutes.
4. Set top of double boiler in cold water.
5. Beat egg mixture, at high speed, 5 minutes until very light and fluffy.
6. With wire whisk or rubber scraper, gently fold in flour until well combined.
7. Stir in cooled butter and lemon peel just until blended.
8. Into prepared pans, pour using 1 tablespoon batter for each pan.
9. Bake 12 to 15 minutes until golden and cool for 1 minute.
10. Remove from pans with a small spatula, cool completely on wire racks.
SERVING
11. Sprinkle with confectioners' sugar and serve.
