Ingredients

13 Tbs unsalted butter
1 and 2/3 cup confectioners sugar
1/2 cup + 1 Tbs all purpose flour
1/2 cup finely ground unblanched almonds
6 large egg whites
1 Tbs honey
a Madeleine pan, 12 3" madeleines (recipe makes 24)
cooking spray or softened butter and flour for
greasing and dusting pan

How to make Madeleines

Prepare the brown butter: in a medium sauce pan over
moderate heat melt butter until it turns brown and gives
off a nutty aroma. remove to a bowl to arrest cooking.
let cool.
Sift the flour and sugar into a bowl and stir in almonds.
In a mixer, beat egg whites until frothy. Add flour/sugar/nut
mixture and stir. Add honey and brown butter. Spray pan and using
a spoon divide 1/2 of mixture into molds, filing nearly to the top.
Refrigerate pan for at least 30 mins and up to one hour.
Bake at 375 for 12-15 minutes or until golden and springy to the
tough. Immediately remove Madeleines from mold and let cool
on a wire rack. Let pan cool and spray again then divide remaining
batter in pans, refrigerate then bake as in previous batch.
