Mackerel With Yogurt Sauce Recipe

Ingredients
4 mackerel boned and filleted
1/4 cup butter
Salt and pepper
1 teaspoon dried tarragon
1 lemon Sauce:
1 teaspoon tomato paste
1 teaspoon lemon juice
2/3 cup unflavored yogurt
Salt and pepper
1 teaspoon dried tarragon a few capers
Directions
1 Arrange the fish, skin side down, in a 30 x 20 x 5cm/ 12x8x2 inch ovenproof glass dish.
2 Flake butter evenly over fish. Add salt and pepper to taste and sprinkle over tarragon.
3 Squeeze juice from half the lemon over the fish. Cover with plastic wrap, and pierce.
4 Microwave on full power for 8 minutes, giving the dish a half turn, half way through cooking. Cover and set aside.
5 Meanwhile, prepare the sauce. Blend tomato puree (paste) and lemon juice together, then gradually beat in the yogurt.
6 Add salt and pepper to taste and fold in the tarragon and capers.
7 Serve the fish with a selection of fresh vegetables and hand the cold sauce separately.
