Mackerel With Olives Recipe
Ingredients
| 4 Boston mackerel | ||
| Small pitted green olives | ||
| Ground black pepper | 1 To taste (Salad oil) | |
| Black Italian or Greek olives | ||
| Lemon slices | ||
| Salt | To Taste | |
Directions
1. Preheat oven to moderate (350° F.). Lightly grease the bottom of a shallow glass or earthenware baking dish with salad oil.
2. Stuff each mackerel with five or six green olives. Arrange the fish in the baking dish, sprinkle with a little more oil and with salt and pepper. Scatter the black olives around the fish.
3. Bake, uncovered, until the fish flakes easily when tested with a fork, about twenty-five minutes. Garnish the mackerel with lemon slices
